Grease traps are mechanical elements of a building’s sanitary sewer system, designed to capture heavy grease and oils from the wastewater stream that flows from the establishment. They prevent these substances from entering and ultimately clogging the municipal collection system. Most commercial kitchens have grease traps that vary in size from 500-10,000 gallon capacity and are located underground, outside the kitchen.
